Garlic Powder: 1 tablespoon
Paprika: 1 tablespoon
Cumin: 1 teaspoon
Salt: 1 teaspoon
Black Pepper: 1/2 teaspoon
BBQ Sauce: 1/2 cup (optional for serving)

Instructions

Prep Time: 15 minutes
Marinate Time: 2 hours (or overnight)
Cook Time: 2.5 hours
Total Time: 5 hours

Prepare the Ribs (10 minutes):
Remove the membrane from the back of the ribs. Rinse and pat dry. In a mixing bowl, combine garlic powder, paprika, cumin, salt, and black pepper. Rub the spice mixture generously over both sides of the ribs.

Marinate the Ribs (2 hours):
Brush the ribs with 2 tablespoons of Argentinean Chimichurri Olive Oil. Wrap them in foil and refrigerate for at least 2 hours or overnight for maximum flavor.

Preheat the Grill or Oven (10 minutes):
Preheat your grill to 275°F (135°C) or your oven to the same temperature.

Cook the Ribs (2.5 hours):
Place the wrapped ribs on the grill or in the oven and cook for 2 hours. Remove the foil for the last 30 minutes to let the ribs caramelize and develop a crust. Brush with more chimichurri olive oil during the final 10 minutes.

Remove the ribs from the grill or oven and let rest for 10 minutes. Slice into individual ribs and serve with BBQ sauce on the side, if desired.
