Instructions
  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a large bowl, whisk together the Lemongrass & Ginger Infused Olive Oil Blend, lime juice, honey, garlic, salt, and black pepper.
  3. Add the shrimp, bell pepper, zucchini, and red onion, then toss until everything is evenly coated.
  4. Let the mixture sit for 10-15 minutes while you preheat a grill or grill pan to medium-high heat.
  5. Thread the shrimp and vegetables onto the skewers, alternating pieces for even cooking.
  6. Grill the skewers for 2-3 minutes per side, until the shrimp are opaque and lightly charred and the vegetables are tender with a little bite.
  7. Transfer to a platter, sprinkle with cilantro, and serve with lime wedges.

Notes

For the best texture, do not marinate the shrimp for too long or they can turn soft. Keep the grill hot so the shrimp sear quickly. If using metal skewers, no soaking is needed. This recipe is best served right after grilling.
