  1. Rinse the jasmine rice under cool water until the water runs mostly clear, then drain well.
  2. Warm the Hawaiian Kona Grill Infused Olive Oil Blend and butter in a medium saucepan over medium heat.
  3. Add the onion and cook for 3 to 4 minutes, stirring occasionally, until softened.
  4. Stir in the garlic and cook for 30 seconds until fragrant.
  5. Add the rice and stir for 1 minute so the grains are lightly coated.
  6. Pour in the coconut milk, water, and kosher salt, then bring the mixture to a gentle boil.
  7. Reduce the heat to low, cover, and simmer for 15 minutes without lifting the lid.

  9. Fluff the rice with a fork, then fold in the pineapple tidbits, toasted coconut, cilantro, green onion, and lime juice.
