  • 1 1/2 pounds boneless skinless chicken thighs cut into 1-inch pieces
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 large yellow onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 4 cloves garlic minced
  • 2 medium tomatoes chopped
  • 2 cups uncooked long-grain white rice
  • 4 cups chicken stock
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads crushed
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • 1 lemon cut into wedges

  1. 1. Season the chicken thighs with 1 teaspoon of the kosher salt and the black pepper.
  2. 2. Heat the Spain Paella Infused Olive Oil Blend in a wide skillet or paella pan over medium-high heat. Add the chicken and cook until browned on the outside, about 4 to 5 minutes. Transfer the chicken to a plate.
  3. 3. Reduce the heat to medium and add the onion, red bell pepper, and green bell pepper to the same pan. Cook until softened, about 5 minutes, stirring often.
  4. 4. Stir in the garlic and cook for 30 seconds, just until fragrant. Add the chopped tomatoes and cook for 2 minutes to build a savory base.
  5. 5. Add the rice, smoked paprika, saffron, and remaining 1/2 teaspoon salt. Stir for 1 minute so the grains are coated and lightly toasted.
  6. 6. Pour in the chicken stock and bring to a simmer. Nestle the browned chicken back into the pan, then add the green beans.
  7. 7. Lower the heat to medium-low, cover loosely, and cook without stirring until the rice is tender and most of the liquid is absorbed, about 18 to 20 minutes.
  8. 8. Scatter the peas over the top during the last 5 minutes of cooking. Cover again and let them heat through.
  9. 9. Remove the pan from the heat and let it rest for 5 minutes. Fluff the rice gently with a fork, then finish with parsley and lemon wedges.
