  • 1 tablespoon neutral oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons tomato paste
  • 2 medium tomatoes diced
  • 1 pound Yukon Gold potatoes peeled and cut into 1-inch cubes
  • 1 cup bamboo shoots drained and sliced
  • 4 cups vegetable broth
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes
  • 2 cups baby spinach
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon lime juice

Method
 

Instructions
  1. Heat the Nepal Himalayan Spice Infused Olive Oil Blend and neutral oil in a medium pot over medium heat.
  2. Add the onion and cook for 5 minutes, stirring often, until softened.
  3. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
  4. Add the tomato paste and cook for 1 minute to deepen the flavor.
  5. Stir in the diced tomatoes, potatoes, bamboo shoots, broth, salt, turmeric, cumin, coriander, and red pepper flakes.
  6. Bring the pot to a gentle boil, then reduce the heat and simmer uncovered for 25 to 30 minutes, stirring occasionally, until the potatoes are tender.
  7. Stir in the spinach and cook for 1 to 2 minutes until just wilted.
  8. Finish with cilantro and lime juice, then taste and adjust salt if needed.
  9. Serve hot with rice or flatbread.

Notes

Use canned bamboo shoots that have been drained well for the cleanest texture. Keep the simmer gentle so the potatoes stay intact and the broth stays cozy. The featured blend is used as the flavor anchor at the start of the recipe.
