- Heat 1 tablespoon infused olive oil in a large skillet over medium heat. Add beaten eggs and scramble until just set. Remove and set aside.
- Add remaining infused olive oil to the skillet. Add carrots and bell pepper and sauté 3–4 minutes until slightly tender. Stir in peas.
- Add cooked rice to the skillet. Break apart any clumps and stir-fry for 4–5 minutes until heated through and lightly crisped.
- Return scrambled eggs to the skillet. Add soy sauce and optional sesame oil. Toss well to combine. Stir in green onions and cook 1 minute more.
- Serve immediately while hot and aromatic.
