  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried dill
  • 1 cup cherry tomatoes halved
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon capers drained
  • 1 tablespoon panko breadcrumbs

Method
 

Instructions
  1. Preheat the oven to 400°F and lightly oil a 9x13-inch baking dish.
  2. Pat the cod fillets dry and place them in the baking dish in a single layer.
  3. In a small bowl, stir together the Signature Seafood Infused Olive Oil Blend, extra virgin olive oil, garlic, lemon zest, lemon juice, salt, black pepper, and dried dill.
  4. Spoon the olive oil mixture evenly over the cod, then scatter the cherry tomatoes and capers around the fish.
  5. Sprinkle the panko breadcrumbs over the top for a light golden finish.
  6. Bake for 15 to 18 minutes, until the cod flakes easily with a fork and the tomatoes have softened.
  7. Top with chopped parsley and serve right away with the pan juices spooned over each portion.

Notes

For the best texture, avoid crowding the baking dish. If your cod fillets are very thick, add 2 to 3 minutes to the bake time. The olive oil mixture can be stirred together a few minutes ahead, but wait to spoon it over the fish until just before baking.
