Method
- Equipment: Grill or oven, mixing bowl, aluminum foil, basting brush.
- Prep Time: 15 minutes
- Marinate Time: 2 hours (or overnight)
- Cook Time: 2.5 hours

Prepare the Ribs (10 minutes):
- Remove the membrane from the back of the ribs. Rinse and pat dry. In a mixing bowl, combine garlic powder, paprika, cumin, salt, and black pepper. Rub the spice mixture generously over both sides of the ribs.
Marinate the Ribs (2 hours):
- Brush the ribs with 2 tablespoons of Argentinean Chimichurri Olive Oil. Wrap them in foil and refrigerate for at least 2 hours or overnight for maximum flavor.
Preheat the Grill or Oven (10 minutes):
- Preheat your grill to 275°F (135°C) or your oven to the same temperature.
Cook the Ribs (2.5 hours):
- Place the wrapped ribs on the grill or in the oven and cook for 2 hours. Remove the foil for the last 30 minutes to let the ribs caramelize and develop a crust. Brush with more chimichurri olive oil during the final 10 minutes.
Serve (10 minutes):
- Remove the ribs from the grill or oven and let rest for 10 minutes. Slice into individual ribs and serve with BBQ sauce on the side, if desired.
