Ingredients

Ingredients
  • 2 pounds sweet potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons Caribbean Calypso Infused Olive Oil Blend
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh cilantro

Equipment

  • 1 Large Sheet Pan For even roasting
  • 1 Mixing bowl Large enough to toss the potatoes
  • 1 sheet Parchment paper Keeps cleanup easy
  • 1 Spatula For flipping halfway through

Method

Instructions
  1. 1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. 2. Place the sweet potatoes in a large bowl and add the Caribbean Calypso Infused Olive Oil Blend, extra virgin olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss until the cubes are evenly coated.
  3. 3. Spread the sweet potatoes in a single layer on the prepared sheet pan.
  4. 4. Roast for 20 minutes, then flip the pieces with a spatula and continue roasting for 10 to 15 minutes, until the edges are browned and the centers are tender.
  5. 5. Transfer the roasted sweet potatoes to a serving bowl and toss with the lime juice.
  6. 6. Finish with chopped cilantro and serve warm.

Notes

For deeper caramelization, avoid overcrowding the pan. A hot oven and plenty of space help the sweet potatoes roast instead of soften. The lime juice is best added after roasting so the flavor stays bright.
