  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup heavy cream
  • 2 tablespoons Popcorn Infused Olive Oil Blend plus more for finishing
  • 1/4 cup fresh basil leaves torn
  • Crusty bread for serving

Method
 

Instructions
  1. Melt the butter in a large pot over medium heat. Add the onion and cook, stirring often, until soft and translucent, about 5 minutes.
  2. Stir in the garlic and tomato paste, then cook for 1 minute until fragrant and slightly darkened.
  3. Add the tomatoes with their juices, vegetable broth, salt, black pepper, sugar, dried basil, and red pepper flakes. Bring the pot to a gentle simmer.
  4. Cook uncovered for 20 minutes, stirring now and then, so the flavors come together and the tomatoes break down.
  5. Use an immersion blender to puree the soup until smooth, or blend carefully in batches in a countertop blender.
  6. Return the soup to low heat and stir in the heavy cream and 2 tablespoons of Popcorn Infused Olive Oil Blend. Warm gently for 2 to 3 minutes without boiling.
  7. Ladle into bowls and finish each serving with a small drizzle of Popcorn Infused Olive Oil Blend and torn basil. Serve warm with crusty bread.

Notes

The final drizzle is what makes the bowl sing, so add it after reheating or right before serving. For a silkier finish, blend longer; for a more rustic feel, leave a little texture. If using salted broth, reduce the added salt slightly. Do not boil after adding the cream.
