  • 1 teaspoon garlic powder

  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon grated Parmesan cheese optional

Method
 

Instructions
  1. 1. Preheat the oven to 450°F and line a large sheet pan with parchment paper.
  2. 2. Place the potatoes in a large pot, cover with cold water, and add 1 tablespoon of the kosher salt. Bring to a boil, then cook until the potatoes are just fork-tender, about 15 to 18 minutes.
  3. 3. Drain the potatoes well and let them sit for a few minutes so excess steam escapes.
  4. 4. Spread the potatoes on the prepared sheet pan and gently smash each one with the bottom of a glass or measuring cup until flattened but still intact.
  5. 5. Drizzle the potatoes with the extra-virgin olive oil, then sprinkle with the remaining kosher salt, garlic powder, black pepper, and smoked paprika.
  6. 6. Roast for 20 to 25 minutes, flipping once halfway through, until the bottoms and edges are deeply golden and crisp.
  7. 7. Remove the pan from the oven and immediately drizzle the potatoes with the Smoked Garlic Infused Olive Oil.
  8. 8. Finish with parsley, Parmesan if using, and a pinch of flaky salt. Serve hot.

Notes

Boiling the potatoes until just tender helps them smash cleanly without falling apart. For extra crisp edges, make sure the potatoes are dry before they go into the oven. The smoked garlic oil is best used as a finishing touch so its flavor stays bold and fragrant.
