- 1. In a large bowl, combine the ground turkey, Pickle Infused Olive Oil Blend, chopped dill pickles, fresh dill, red onion, garlic, kosher salt, black pepper, Dijon mustard, panko, and egg. Mix gently until just combined.
- 2. Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick. Press a shallow dimple in the center of each patty.
- 3. Heat a large skillet or grill pan over medium heat and brush lightly with a little extra olive oil if needed.
- 4. Cook the patties for 5 to 6 minutes on the first side, then flip and cook 4 to 5 minutes more, until the burgers are cooked through and the centers reach 165°F.
- 5. Stir the pickle juice into the mayonnaise to make a quick pickle mayo.
- 6. Toast the buns if desired, then layer with lettuce, tomato, a burger patty, red onion, and a spoonful of pickle mayo. Serve right away.

For the best texture, handle the turkey mixture lightly and avoid overmixing. Chopped pickles add bright tang and little bursts of crunch, while the Pickle Infused Olive Oil Blend ties the whole burger together with savory, briny flavor. If your pickles are very wet, pat them dry before mixing to keep the patties from getting loose. The burgers also work well on the grill if the grates are clean and lightly oiled.
