- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Place the halved cherry tomatoes on the baking sheet with the extra-virgin olive oil, balsamic vinegar, kosher salt, black pepper, oregano, and minced garlic.
- Roast the tomatoes for 8 to 10 minutes until they soften and pick up a lightly blistered edge.
- While the tomatoes roast, brush both sides of the baguette slices with the Smoked Garlic Infused Olive Oil.
- Arrange the bread on a separate baking sheet and toast for 5 to 7 minutes, flipping once, until golden and crisp.
- Transfer the roasted tomatoes to a bowl and stir in the basil, red onion, Parmesan cheese, and crushed red pepper flakes if using.
- Spoon the tomato mixture onto the toasted bread slices and finish with an extra drizzle of Smoked Garlic Infused Olive Oil.
- Serve right away while the bread is crisp and the tomatoes are warm.
Notes
For the best texture, toast the bread just before serving and keep the tomato mixture slightly spoonable rather than watery. If your tomatoes are very juicy, let them drain briefly before assembling.
