- Heat a large skillet or wok over medium-high heat and add the neutral oil plus 1 tablespoon of the Chinese Five Spice Infused Olive Oil Blend.
- Add the beaten eggs and cook, stirring gently, until softly set; transfer the eggs to a plate.
- Add the onion and carrots to the hot pan and cook until the onion is translucent and the carrots begin to soften.
- Stir in the garlic and cook just until fragrant.
- Add the chilled rice, breaking up any clumps with a spatula, and stir to coat the grains in the oil and vegetables.
- Add the peas, soy sauce, rice vinegar, salt, and black pepper, then toss everything together until the rice is evenly seasoned and hot.
- Return the eggs to the skillet, add the remaining Chinese Five Spice Infused Olive Oil Blend, and fold in the green onions.
- Cook for 1 more minute, sprinkle with toasted sesame seeds, and serve right away.
Notes
Cold rice gives the best texture because the grains stay separate in the pan. If your rice is freshly cooked, spread it on a tray and chill it before making the recipe. Keep the heat high enough for quick cooking, but stir often so the garlic does not scorch. Serve immediately for the best texture and aroma.
