  • 2 large English cucumbers
  • 1 cup cherry tomatoes
  • 1/4 small red onion
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons Spearmint Infused Olive Oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon crumbled feta cheese optional

Method
 

Instructions
  1. Peel the cucumbers in alternating strips if desired, then slice them into thin rounds or half-moons and place them in a medium bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Slice the red onion very thinly and add just enough for a sharp, fresh bite.
  4. In a small bowl, whisk the Spearmint Infused Olive Oil, lemon juice, red wine vinegar, sea salt, and black pepper until combined.
  5. Pour the dressing over the vegetables and toss gently so everything is lightly coated.
  6. Fold in the dill and parsley, then let the salad sit for 5 minutes so the flavors settle together.
  7. Top with crumbled feta if you want, then serve chilled or at cool room temperature.

Notes

This salad is at its best when the vegetables are cold and the dressing is added just before serving. For a stronger spearmint note, add an extra teaspoon of Spearmint Infused Olive Oil at the end. If the cucumbers are very watery, salt them lightly and drain for 5 minutes before dressing.
