- Place the potatoes in a large pot and cover them with cold salted water. Bring to a boil, then reduce the heat and simmer until the potatoes are fork-tender, about 15 to 18 minutes.
- Drain the potatoes well and return them to the hot pot for 1 minute so excess moisture cooks off.
- Mash the potatoes with the butter, warmed milk, minced garlic, salt, and pepper until mostly smooth.
- Fold in the Holiday Harvest Infused Olive Oil Blend, parsley, chives, and sour cream until the potatoes are creamy and evenly seasoned.
- Taste and adjust the salt and pepper, then serve warm with an extra drizzle of olive oil and a sprinkle of herbs if desired.
Notes
Yukon gold potatoes give this mash a naturally buttery texture, but russets can be used if that is what you have on hand. For the smoothest result, avoid overmixing once the potatoes are mashed. The olive oil goes in at the end so its warm herb character stays noticeable in the finished dish.
