- Preheat a grill to medium-high heat and clean the grates well, then oil them lightly to help the dough release cleanly.
- Shape the pizza dough into a 12-inch round on a lightly floured surface, then dust a pizza peel or inverted sheet pan with cornmeal.
- Brush the dough lightly with 1 tablespoon of the South Carolina Gold BBQ Infused Olive Oil Blend, then place it on the hot grill for 2 to 3 minutes until the bottom firms and shows grill marks.
- Flip the dough back onto the peel, then spread barbecue sauce over the grilled side, leaving a 1/2-inch border around the edge.
- Top with mozzarella, smoked cheddar, chicken, red onion, and a pinch of salt and black pepper.
- Slide the pizza back onto the grill, close the lid, and cook for 5 to 7 minutes until the cheese melts and the crust is crisp around the edges.
- Remove the pizza from the grill, drizzle with the remaining South Carolina Gold BBQ Infused Olive Oil Blend, and finish with chopped parsley.
- Rest for 2 minutes, slice, and serve warm.
Notes
For a sturdier crust, parbake the dough for 2 minutes on one side before adding toppings. Keep the sauce layer moderate so the pizza stays crisp instead of soggy. If your grill runs hot, move the pizza to a cooler zone after the lid closes.
