  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded smoked cheddar cheese
  • 1/2 medium red onion thinly sliced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon all-purpose flour for shaping
  • 1 tablespoon olive oil for the grill grates
  • Pinch kosher salt
  • Pinch black pepper

Method
 

Instructions
  1. Preheat a grill to medium-high heat and clean the grates well, then oil them lightly to help the dough release cleanly.
  2. Shape the pizza dough into a 12-inch round on a lightly floured surface, then dust a pizza peel or inverted sheet pan with cornmeal.
  3. Brush the dough lightly with 1 tablespoon of the South Carolina Gold BBQ Infused Olive Oil Blend, then place it on the hot grill for 2 to 3 minutes until the bottom firms and shows grill marks.
  4. Flip the dough back onto the peel, then spread barbecue sauce over the grilled side, leaving a 1/2-inch border around the edge.
  5. Top with mozzarella, smoked cheddar, chicken, red onion, and a pinch of salt and black pepper.
  6. Slide the pizza back onto the grill, close the lid, and cook for 5 to 7 minutes until the cheese melts and the crust is crisp around the edges.
  7. Remove the pizza from the grill, drizzle with the remaining South Carolina Gold BBQ Infused Olive Oil Blend, and finish with chopped parsley.
  8. Rest for 2 minutes, slice, and serve warm.

Notes

For a sturdier crust, parbake the dough for 2 minutes on one side before adding toppings. Keep the sauce layer moderate so the pizza stays crisp instead of soggy. If your grill runs hot, move the pizza to a cooler zone after the lid closes.
