  1. 1. Pat the steaks dry with paper towels and place them in a shallow dish or zip-top bag.
  2. 2. In a small bowl, whisk together the Smoked Garlic Infused Olive Oil, Worcestershire sauce, lemon juice, minced garlic, kosher salt, black pepper, smoked paprika, and parsley.
  3. 3. Pour the marinade over the steaks and turn them to coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  4. 4. Take the steaks out of the refrigerator 20 to 30 minutes before grilling so they lose some of the chill.
  5. 5. Preheat a grill to medium-high heat and clean the grates well.
  6. 6. Remove the steaks from the marinade and let any excess drip off.
  7. 7. Grill the steaks for 4 to 6 minutes per side for medium-rare, or until they reach your preferred doneness.
  8. 8. If you like, add the butter during the last minute of cooking and spoon it over the steaks as they finish.
  9. 9. Transfer the steaks to a cutting board and rest them for 5 to 10 minutes.
  10. 10. Slice against the grain and serve with lemon wedges.

Notes

Use a steak cut with good marbling for the best grilled texture. Keep the marinade focused on flavor and don’t leave the steak in it too long, since the lemon juice can start to change the texture after several hours.
