- 1. Pat the beef dry and season it with half the salt and black pepper.
- 2. Heat the Hungarian Infused Olive Oil Blend in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides, then transfer it to a plate.
- 3. Add the potatoes to the skillet and cook, stirring now and then, until the edges begin to turn golden, about 8 minutes.
- 4. Stir in the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic, tomato paste, paprika, and caraway seeds, then cook for 1 minute until fragrant.
- 5. Return the beef to the skillet and pour in the beef broth, scraping up any browned bits from the bottom of the pan.
- 6. Bring the skillet to a gentle simmer, cover partially, and cook for 18 to 20 minutes, stirring occasionally, until the beef is tender and the potatoes are cooked through.
- 7. Taste and adjust the seasoning with the remaining salt and black pepper.
- 8. Spoon into bowls and finish with chopped parsley before serving.
Notes
For the best browning, keep the pan hot enough to sear the beef in batches instead of crowding it. If you prefer a thicker skillet sauce, uncover the pan for the final 3 to 5 minutes so the broth reduces a bit more.
