- Heat the Nepal Himalayan Spice Infused Olive Oil Blend and neutral oil in a large skillet or Dutch oven over medium heat.
- Add the onion and cook, stirring often, until softened and lightly golden, about 5 minutes.
- Stir in the garlic and ginger and cook for 30 seconds until fragrant.
- Add the cumin, turmeric, coriander, and cayenne, then stir for another 30 seconds to bloom the spices.
- Add the potatoes, cauliflower, diced tomatoes, water, salt, and black pepper. Stir well and bring the pan to a gentle simmer.
- Cover and cook for 18 to 22 minutes, stirring occasionally, until the potatoes are tender and the cauliflower is soft but not mushy.
- Uncover and simmer for 3 to 5 minutes more if you want the sauce to thicken slightly.
- Taste and adjust with more salt if needed, then stir in the cilantro and lemon juice.
- Serve hot with rice or flatbread, finishing each bowl with a small drizzle of the featured blend if desired.
