  • 4 salmon fillets 6 ounces each
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 2 tablespoons Zest Harmony Infused Olive Oil Blend
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving

  • 1 Large skillet 10 to 12 inch, heavy-bottomed
  • 1 fish spatula or thin turner for flipping salmon cleanly
  • 1 microplane or fine zester for lemon zest
  • 1 Small bowl for mixing the finish
  • as needed Paper towels for drying the salmon

Method
 

Instructions
  1. Pat the salmon fillets dry with paper towels and season both sides with kosher salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Place the salmon in the skillet skin-side down and cook for 4 to 5 minutes without moving it, until the skin is crisp and the fillets release easily.
  4. Flip the salmon and cook for 2 to 3 minutes more, until the fish is just cooked through. Transfer to a plate.
  5. Reduce the heat to medium-low, add the butter to the skillet, and let it melt. Stir in the garlic and cook for about 30 seconds until fragrant.
  6. Remove the pan from the heat and stir in the Zest Harmony Infused Olive Oil Blend, lemon juice, lemon zest, and parsley.
  7. Spoon the citrus-herb finish over the salmon and serve right away with lemon wedges.

Notes

For the best texture, start with salmon fillets that are similar in thickness so they finish at the same time. If your fillets are very thick, add 1 to 2 minutes to the second side. The blend is added at the end to keep its fresh citrus-herb character lively on the plate.
