Ingredients

Ingredients
  • 1 large head cauliflower cut into bite-size florets
  • 3 tablespoons Popcorn Infused Olive Oil Blend
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest

Equipment

  • 1 Large Sheet Pan For even roasting
  • 1 Mixing bowl Large enough to toss cauliflower
  • 1 sheet Parchment paper Helps with cleanup and browning
  • 1 Microplane For lemon zest
  • 1 Spatula For flipping florets

Method

Instructions
  1. 1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. 2. Cut the cauliflower into evenly sized florets and dry them well with a clean towel so they roast nicely.
  3. 3. In a large bowl, toss the cauliflower with the Popcorn Infused Olive Oil Blend, extra virgin olive oil, salt, black pepper, and garlic powder until every piece is coated.
  4. 4. Spread the cauliflower on the prepared sheet pan in a single layer, leaving space between the florets.
  5. 5. Roast for 20 minutes, then flip the florets and roast for 8 to 10 minutes more until deeply golden at the edges.
  6. 6. Sprinkle the Parmesan and panko over the hot cauliflower and return it to the oven for 2 to 3 minutes until the topping melts together and turns lightly crisp.
  7. 7. Finish with parsley and lemon zest, then serve warm.

Notes

The Popcorn Infused Olive Oil Blend adds a buttery-savory popcorn character that pairs naturally with the nutty Parmesan and roasted cauliflower edges. For the best texture, do not overcrowd the pan. This recipe is naturally vegetarian. If you prefer extra color, roast until the edges are deeply browned but not burnt.
