Stuff the Peppers (5 minutes):
- Fill each bell pepper half with the beef mixture. Top each with a slice of provolone cheese.
Bake (18-20 minutes):
- Bake the stuffed peppers for 15 minutes. Switch to the broiler for the last 2-3 minutes to melt and brown the cheese slightly.
Garnish and Serve:
- Remove from the oven, sprinkle with fresh parsley, and serve hot.
