- Preheat the oven to 350°F. Grease and line a 9x13-inch baking pan with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, whisk the eggs, buttermilk, Dark Roast Coffee Infused Olive Oil, brewed coffee, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Slowly stir in the boiling water until the batter is smooth and loose.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 32 to 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool the cake in the pan for 15 minutes, then transfer to a rack to cool completely.
- Spread the chocolate ganache over the cooled cake and finish with a light dusting of powdered sugar.
- Slice and serve once the topping sets slightly.
Notes
For a deeper coffee note, use freshly brewed dark roast coffee and let it cool slightly before mixing. The cake stays moist for several days and slices cleanly once fully cooled. Do not add extra cocoa beyond the listed amount, or the crumb can turn dry.
