  • 1 whole chicken about 4 to 5 pounds
  • 3 tablespoons Scarborough Fair Infused Olive Oil Blend
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 lemon halved
  • 4 garlic cloves smashed
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 small yellow onion quartered
  • 2 tablespoons water

Method
 

Instructions
  1. 1. Heat the oven to 425°F and set a rack in the lower-middle position.
  2. 2. Pat the chicken dry with paper towels and place it in a roasting pan or oven-safe skillet.
  3. 3. Stir together the Scarborough Fair Infused Olive Oil Blend, kosher salt, black pepper, garlic powder, onion powder, and dried parsley.
  4. 4. Rub the seasoned oil all over the chicken, including under the skin where you can reach it.
  5. 5. Stuff the cavity with the lemon halves, smashed garlic, thyme, rosemary, and onion quarters.
  6. 6. Tie the legs together if you like a neater presentation.
  7. 7. Roast for 20 minutes, then reduce the oven temperature to 375°F and continue roasting for about 55 minutes, or until the thickest part of the thigh reaches 165°F.
  8. 8. If the pan starts looking dry, add 2 tablespoons water to keep the drippings from catching.
  9. 9. Transfer the chicken to a cutting board and rest for 15 minutes before carving.
  10. 10. Spoon the pan juices over the sliced chicken and serve warm.

Notes

For the best color, make sure the chicken skin is very dry before seasoning. Roast times can vary depending on the size of the bird, so temperature is the most reliable finish point. Leftover chicken works well in sandwiches, salads, and grain bowls.
