- 1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
- 2. Place the cauliflower florets in a large bowl and toss with Middle Eastern Infused Olive Oil Blend, extra-virgin olive oil, salt, black pepper, cumin, and smoked paprika until well coated.
- 3. Spread the cauliflower in a single layer on the prepared sheet pan.
- 4. Roast for 25 to 30 minutes, flipping once halfway through, until the florets are browned at the edges and tender in the center.
- 5. While the cauliflower roasts, whisk together the tahini, lemon juice, garlic, and warm water in a small bowl until smooth and creamy. Add more water a teaspoon at a time if needed.
- 6. Transfer the roasted cauliflower to a serving platter and drizzle with the tahini sauce.
- 7. Finish with chopped parsley and toasted sesame seeds, then serve warm.
Notes
For the best browning, roast the cauliflower on a hot pan with plenty of space. If you like a little extra color, broil for the last 1 to 2 minutes and watch closely. The tahini sauce should be thick enough to cling but loose enough to drizzle.
