- If using wooden skewers, soak them in water for at least 20 minutes.
- In a large bowl, whisk together the Middle Eastern Infused Olive Oil Blend, Greek yogurt, lemon juice, garlic, salt, cumin, paprika, coriander, black pepper, cinnamon, and parsley.
- Add the chicken pieces and toss until every piece is coated. Cover and marinate in the refrigerator for at least 1 hour, or up to 8 hours for deeper flavor.
- Thread the chicken onto skewers, packing the pieces snugly but not tightly.
- Preheat a grill or grill pan over medium-high heat and brush the grates or pan lightly with olive oil.
- Cook the skewers for 10 to 12 minutes total, turning every 2 to 3 minutes, until the chicken is browned on the outside and cooked through.
- Transfer to a platter and rest for 3 minutes before serving.
- Finish with extra lemon wedges and chopped parsley if you like.
Notes
Marinating time gives the flavor room to settle into the chicken, but even a short soak still works well. Keep the grill hot enough to brown the chicken without drying it out. If you want a fuller platter, add onion wedges or bell pepper pieces to the skewers.
