  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 2 dried red chiles
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon ground turmeric
  • 1 small yellow onion finely chopped
  • 3 garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 2 medium Roma tomatoes chopped
  • 1 tablespoon tomato paste
  • 3 tablespoons tamarind paste
  • 4 cups water
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/4 cup chopped cilantro
  • 1 tablespoon fresh lime juice
  • 1 cup cooked white rice for serving (optional)

Method
 

Instructions
  1. Heat the ghee in a medium saucepan over medium heat.
  2. Add the mustard seeds, cumin seeds, fenugreek seeds, dried chiles, and black peppercorns. Cook until the seeds start to pop and smell fragrant.
  3. Stir in the chopped onion and cook until softened, about 3 minutes.
  4. Add the garlic and ginger and cook for 30 seconds.
  5. Stir in the turmeric, chopped tomatoes, and tomato paste. Cook until the tomatoes begin to break down, about 4 minutes.
  6. Add the tamarind paste, water, and salt. Bring to a gentle simmer.
  7. Simmer for 10 to 12 minutes, stirring now and then, until the broth tastes balanced and the tomatoes are fully softened.
  8. Turn off the heat and stir in the cilantro and lime juice.
  9. Ladle into bowls and finish each serving with a small drizzle of India Madras Infused Olive Oil Blend.
  10. Serve hot with rice if you like.

Notes

Rasam tastes best when the broth stays light and bright, so avoid boiling it hard. The featured blend is a finishing oil here, not the main cooking fat, which keeps its curry spice aroma lively in the bowl. If your tamarind paste is very concentrated, start with a little less and build to taste.
