- 1. In a large bowl, combine the warm milk, yeast, and granulated sugar. Let it sit for 5 to 10 minutes until foamy.
- 2. Whisk in the egg, Cardamom Infused Olive Oil, and melted butter.
- 3. Add the flour, salt, and ground cardamom. Stir until a soft dough forms.
- 4. Knead the dough on a lightly floured surface for 6 to 8 minutes until smooth and elastic, adding a little flour only if needed.
- 5. Place the dough in a greased bowl, cover it, and let it rise in a warm spot for 1 to 1 1/2 hours, until doubled in size.
- 6. In a small bowl, mix the softened butter, brown sugar, cinnamon, and chopped almonds to make the filling.
- 7. Roll the dough into a large rectangle about 12 by 18 inches. Spread the filling evenly over the dough.
- 8. Starting from the long side, roll the dough into a tight log and cut it into 12 even pieces.
- 9. Arrange the buns cut-side up on a parchment-lined baking sheet or in a greased baking dish, leaving a little space between them.
- 10. Cover the buns and let them rise again for 30 to 45 minutes until puffy.
- 11. Heat the oven to 375°F. Whisk the egg yolk and milk together, then brush the tops of the buns. Sprinkle with pearl sugar.
- 12. Bake for 20 to 25 minutes until golden brown and set in the center. Cool slightly before serving.
Notes
For the softest texture, avoid adding too much flour during kneading. The dough should stay supple and slightly tacky. These buns are best enjoyed the day they are baked, while the cardamom aroma is fresh and the crumb is still tender.
