Ingredients
  

For the Filling:
  • 1 pound Ground Lamb or Beef

  • 1 large Onion finely diced
  • 2 medium Carrots diced
  • 1 cup Frozen Peas
  • 2 cloves Garlic minced
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 cup Beef or Chicken Stock
  • 2 tablespoons All-Purpose Flour
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Thyme dried or 2 sprigs fresh
For the Mashed Potato Topping:
  • 2 pounds Russet Potatoes peeled and diced
  • 3 tablespoons British Blend Olive Oil
  • 1/2 cup Milk or Cream warmed
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Cheddar Cheese optional: 1/2 cup, shredded

Method
 

Cook the Potatoes (15 minutes):
  1. Boil the diced potatoes in a large pot of salted water for 10-15 minutes or until fork-tender. Drain and return to the pot. Add 3 tablespoons of British Blend Olive Oil, warm milk, salt, and pepper. Mash until smooth. Stir in cheddar cheese if using. Set aside.
Prepare the Filling (15 minutes):
  1. Heat 2 tablespoons of British Blend Olive Oil in a large skillet over medium heat. Add the onions, carrots, and garlic, sautéing until softened.
  2. Add the ground lamb or beef, cooking until browned. Stir in the tomato paste, Worcestershire sauce, salt, pepper, and thyme.
