  • 1 tablespoon fresh ginger grated
  • 3 cups cooked chickpeas drained and rinsed
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/2 cup shredded unsweetened coconut
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 tablespoon roasted cashews chopped

  6. Cook for 4 to 5 minutes, stirring often, until the chickpeas are hot and lightly seasoned.

  8. Fold in the coconut, cilantro, and lime juice.
  9. Taste and adjust the salt if needed, then finish with chopped cashews before serving.
