  • 1 13.5-ounce can coconut milk
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro

  3. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
  4. Add the tomato paste, curry powder, cumin, coriander, turmeric, cayenne, salt, and black pepper. Cook for 1 minute, stirring to coat the onions.
  5. Add the chicken pieces and toss until the outside is well coated with the spice mixture.
  6. Pour in the chicken stock and diced tomatoes, scraping up any browned bits from the pan.
  7. Stir in the coconut milk and brown sugar, then bring the curry to a gentle simmer.
  8. Reduce the heat to low and cook uncovered for 20 to 25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
  9. Stir in the lime juice and chopped cilantro.
  10. Serve hot over basmati rice.
