- Heat the India Madras Infused Olive Oil Blend and plain olive oil in a large skillet or Dutch oven over medium heat.
- Add the diced onion and cook, stirring often, until soft and lightly golden, about 6 to 8 minutes.
- Stir in the garlic and ginger and cook for 30 seconds until fragrant.
- Add the tomato paste, curry powder, cumin, coriander, turmeric, cayenne, salt, and black pepper. Cook for 1 minute, stirring to coat the onions.
- Add the chicken pieces and toss until the outside is well coated with the spice mixture.
- Pour in the chicken stock and diced tomatoes, scraping up any browned bits from the pan.
- Stir in the coconut milk and brown sugar, then bring the curry to a gentle simmer.
- Reduce the heat to low and cook uncovered for 20 to 25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Stir in the lime juice and chopped cilantro.
- Serve hot over basmati rice.
Notes
The featured blend carries the curry flavor foundation, so use it at the start with the onions to build the base. If you prefer a milder curry, reduce the cayenne slightly; if you want more heat, add a small pinch more near the end.
