Classic Vanilla Bean Pound Cake Made with Vanilla Olive Oil Blend
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 cup granulated sugar
- 3 large eggs room temperature
- 1/2 cup Vanilla Infused Olive Oil
- 1/2 cup sour cream room temperature
- 2 teaspoons vanilla bean paste
- 1 teaspoon pure vanilla extract
- 2 tablespoons whole milk
- 1 tablespoon unsalted butter softened, for pan
- 1 tablespoon all-purpose flour for pan
- Powdered sugar for serving (optional)
Method
- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan with butter, then dust it with flour and tap out the excess.
- Whisk the flour, baking powder, and salt in a medium bowl until evenly combined.
- In a large bowl, beat the sugar and eggs together for 2 to 3 minutes until pale and slightly thickened.
- Slowly whisk in the Vanilla Infused Olive Oil until the mixture looks smooth and glossy.
- Whisk in the sour cream, vanilla bean paste, vanilla extract, and milk until fully combined.
- Add the dry ingredients and fold gently with a spatula just until no dry streaks remain. Do not overmix.
- Pour the batter into the prepared pan and smooth the top. Tap the pan once on the counter to release any large air bubbles.
- Bake for 55 to 65 minutes, or until the top is deeply golden and a tester inserted in the center comes out clean or with a few moist crumbs.
- Cool the cake in the pan for 15 minutes, then lift it out and cool completely on a wire rack before slicing.
- Dust with powdered sugar if desired and slice once fully cooled for the cleanest pieces.

Bring the eggs, sour cream, and Vanilla Infused Olive Oil to room temperature before mixing so the batter blends smoothly. Mix just until combined once the flour goes in to keep the crumb tender.
For the best dome and even bake, use a light-colored loaf pan or tube pan and check the cake near the end with a tester in the center.
