  • 3 cups water
  • 2 tablespoons New Mexico Hatch Chile Infused Olive Oil Blend
  • 1 medium yellow onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 1/2 cups corn kernels
  • 1 15- ounce can black beans rinsed and drained
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 4 large eggs
  • 1 avocado sliced
  • 1/4 cup chopped cilantro
  • 1 lime cut into wedges
  • 1/2 cup salsa for serving

Instructions
  1. 1. Rinse the rice under cool water until the water runs mostly clear, then combine the rice and water in a medium saucepan and bring to a boil.
  2. 2. Reduce the heat to low, cover, and simmer for 15 minutes, then remove from the heat and let the rice steam for 5 minutes before fluffing with a fork.
