  • 1 bay leaf

  • 4 cups baby spinach
  • 1/4 cup grated Parmesan cheese for serving
  • Fresh parsley for serving

Instructions
  1. 1. In a large bowl, combine the ground chicken, egg, breadcrumbs, Parmesan, parsley, salt, pepper, and garlic powder until just mixed.
  2. 2. Shape the mixture into small meatballs, about 1 inch across, and place them on a plate or tray.
  3. 3. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook until the vegetables begin to soften, about 5 minutes.
  4. 4. Stir in the garlic and oregano and cook for 30 seconds until fragrant.
  5. 5. Pour in the chicken broth and add the bay leaf. Bring the soup to a gentle simmer.
