  • 1 tablespoon chopped pistachios optional

Instructions
  1. Line a rimmed baking sheet with parchment paper.
  2. Melt the dark chocolate in a heatproof bowl over a saucepan of barely simmering water, stirring until smooth.
  3. Remove the bowl from the heat and stir in 1 teaspoon of the Peppermint Infused Olive Oil and the vanilla extract.
  4. Spread the dark chocolate into an even layer on the parchment-lined baking sheet.
  5. Sprinkle about half of the crushed peppermint candies over the dark chocolate and let it set at room temperature for 15 to 20 minutes.
  6. Melt the white chocolate in a clean heatproof bowl over barely simmering water, stirring until smooth.
  7. Remove from the heat and stir in the remaining 1 teaspoon of Peppermint Infused Olive Oil.
  8. Spread the white chocolate gently over the set dark chocolate layer.
  9. Top with the remaining crushed peppermint candies, the crushed candy canes, pistachios if using, and a pinch of sea salt.
  10. Chill until firm, about 45 minutes, then lift the bark from the pan and break into pieces before serving.

Notes

Make sure the chocolate stays dry while melting for the smoothest texture. Let the first layer set before adding the top layer so the bark keeps its distinct two-tone look. For the cleanest breaks, chill fully before cutting or snapping into pieces.
