- 1/4 teaspoon black pepper
- 1 1/2 cups shredded Monterey Jack cheese divided
- 1/4 cup chopped fresh cilantro

- Lime wedges for serving
Method
- 1. Preheat the oven to 400°F and lightly oil a 9x13-inch baking dish.

- 8. Sprinkle the remaining cheese over the tops and drizzle the remaining 1 tablespoon Salsa Fresca Infused Olive Oil Blend over the stuffed peppers.
- 9. Add 2 tablespoons water to the bottom of the baking dish, cover loosely with foil, and bake for 18 minutes.
- 10. Remove the foil and bake for 8 to 10 minutes more, until the peppers are tender and the cheese is melted and lightly golden.
- 11. Finish with chopped cilantro and serve with lime wedges.

For the best texture, soften the pepper shells just enough before stuffing so they hold their shape while baking. If you want a little extra richness, stir a spoonful of the featured blend into the rice filling before baking.
Serving Suggestions
Serve these peppers with a simple green salad, warm tortillas, or a spoonful of salsa on the side. They also pair nicely with avocado slices, lime wedges, or extra shredded cheese for a more filling plate.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through, adding a splash of water to the dish if the filling seems dry.
Variations
Swap the black beans for pinto beans, use quinoa instead of rice, or add diced zucchini for extra vegetable texture. You can also top the peppers with crushed tortilla chips during the last few minutes of baking for a little crunch.
