  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese optional
  • 1 tablespoon grated Parmesan cheese optional

Method
 

Instructions
  1. 1. Heat the oven to 400°F and line a baking sheet with parchment paper.
  2. 2. Arrange the baguette slices on the baking sheet and brush both sides lightly with 2 tablespoons of the Traditional Italian Infused Olive Oil Blend.
  3. 3. Toast the bread for 8 to 10 minutes, flipping once, until golden and crisp at the edges.
  4. 4. In a bowl, combine the diced tomatoes, garlic, basil, balsamic vinegar, salt, black pepper, and the remaining 1 tablespoon of olive oil blend.
  5. 5. Let the tomato mixture sit for 5 minutes so the flavors mingle.
  6. 6. Spoon the tomato mixture onto the toasted bread slices.
  7. 7. If using, finish with mozzarella or Parmesan right before serving.
  8. 8. Serve immediately while the bread is crisp and the tomatoes are fresh and juicy.

Notes

For the best texture, keep the tomato topping separate from the bread until the last minute. If the tomatoes are especially juicy, drain off a little excess liquid before assembling. The recipe is vegetarian as written.
