  • 2 large yellow onions thinly sliced
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded fontina cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup arugula optional for topping
  • 1 tablespoon cornmeal for dusting the pan

Method
 

Instructions
  1. 1. Preheat the oven to 450°F and place a baking sheet or pizza stone inside to heat.
  2. 2. Heat 2 tablespoons of the Roasted Onion & Garlic Infused Olive Oil Blend and the butter in a large skillet over medium-low heat.
  3. 3. Add the sliced onions, salt, and sugar, then cook slowly, stirring often, until the onions turn soft, golden, and deeply caramelized, about 18 to 22 minutes.
  4. 4. Stir in the balsamic vinegar and cook for 1 minute more, then remove the pan from the heat.
  5. 5. Lightly dust a piece of parchment with cornmeal and stretch the pizza dough into a thin oval or rectangle.
  6. 6. Brush the dough with the remaining 1 tablespoon of infused olive oil blend, then sprinkle on the mozzarella, fontina, Parmesan, thyme, and black pepper.
  7. 7. Spoon the caramelized onions evenly over the cheese.
  8. 8. Transfer the flatbread on the parchment to the hot baking sheet or stone and bake until the crust is crisp and the cheese is bubbling, about 10 to 13 minutes.
  9. 9. Remove from the oven, top with parsley and arugula if using, slice, and serve warm.

Notes

Caramelizing the onions slowly gives the flatbread its deep savory sweetness, so keep the heat moderate and give the onions time to soften and brown. The recipe works with store-bought dough for ease, but a house-made dough works too if you have one ready. The finished flatbread is best served the same day while the crust is crisp and the cheese is still stretchy.
