  • 2 medium yellow onions thinly sliced
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 4 slices sourdough bread
  • 1 tablespoon Dijon mustard
  • 1 1/2 cups shredded Gruyère cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Method
 

Instructions
  1. 1. Warm the Roasted Onion & Garlic Infused Olive Oil Blend and butter in a large skillet over medium-low heat.
  2. 2. Add the sliced onions, salt, and pepper, then cook slowly, stirring often, until the onions are soft, jammy, and deeply golden, about 18 to 20 minutes.
  3. 3. Stir in the thyme and cook for 1 minute more, then transfer the onions to a plate.
  4. 4. Spread Dijon mustard on two slices of bread and divide the Gruyère, mozzarella, caramelized onions, and Parmesan between the sandwiches. Top with the remaining bread slices.
  5. 5. Wipe out the skillet if needed, then brush the outside of each sandwich lightly with a little more Roasted Onion & Garlic Infused Olive Oil Blend.
  6. 6. Cook the sandwiches over medium-low heat until the bread is crisp and golden and the cheese is melted, about 3 to 4 minutes per side.
  7. 7. Rest for 1 minute, then slice and serve warm.

Notes

Slow onion cooking makes this sandwich taste fuller and more balanced, so do not rush that step. If the bread browns too quickly, lower the heat and keep going until the cheese melts through.
