  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary finely chopped
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes optional
  • 2 tablespoons chopped fresh parsley for serving

Instructions
  1. 1. Heat the oven to 425°F and place a large sheet pan inside while the oven preheats.
  2. 2. Toss the potatoes with Christmas Roast Infused Olive Oil Blend, extra virgin olive oil, garlic, rosemary, salt, black pepper, garlic powder, and red pepper flakes if using.
  3. 3. Remove the hot sheet pan from the oven and spread the potatoes out in a single layer.
  4. 4. Roast for 20 minutes, then flip the potatoes with a spatula so they brown on more than one side.
  5. 5. Continue roasting for 15 to 20 minutes more, until the potatoes are deeply golden and tender in the center.
  6. 6. Transfer the potatoes to a serving bowl and drizzle with the remaining Christmas Roast Infused Olive Oil Blend.
  7. 7. Finish with chopped parsley and serve hot.

Notes

A hot sheet pan helps the potatoes brown faster, and the final drizzle of Christmas Roast Infused Olive Oil Blend is what gives the dish its bold finish. If the potatoes are very large, give them an extra few minutes in the oven until the centers are tender. Best served right away for the crispiest texture.
