  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup granola
  • 3 tablespoons honey
  • 1 tablespoon Spearmint Infused Olive Oil
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon chopped fresh mint
  • Pinch of fine sea salt

Method
 

Instructions
  1. In a small bowl, whisk together the honey, Spearmint Infused Olive Oil, lemon zest, chopped mint, and a pinch of sea salt until smooth.
  2. Spoon a layer of Greek yogurt into each glass or bowl.
  3. Add a layer of strawberries, blueberries, raspberries, and granola.
  4. Repeat the layers once more, finishing with fruit on top.
  5. Drizzle the spearmint honey mixture over each parfait just before serving.
  6. Serve right away for the best mix of creamy, juicy, and crunchy textures.

Notes

For the cleanest layers, dry the berries well after washing and keep the granola separate until the last minute. The spearmint olive oil should taste bright and herbal, so add it gradually if you want a lighter drizzle. Best served soon after assembly for the nicest texture contrast.
