Ingredients

Ingredients
  • 2 cups plain Greek yogurt
  • 1 cup fresh strawberries hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup granola
  • 3 tablespoons honey
  • 1 tablespoon Spearmint Infused Olive Oil
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon chopped fresh mint
  • Pinch of fine sea salt

Equipment

  • 1 Mixing bowl For the honey drizzle
  • 1 whisk To blend the honey and olive oil
  • 1 set Measuring cups For yogurt, fruit, and granola
  • 1 set Measuring spoons For honey, oil, zest, mint, and salt
  • 4 Parfait Glasses or Small Bowls For layering and serving

Method

Instructions
  1. In a small bowl, whisk together the honey, Spearmint Infused Olive Oil, lemon zest, chopped mint, and a pinch of sea salt until smooth.
  2. Spoon a layer of Greek yogurt into each glass or bowl.
  3. Add a layer of strawberries, blueberries, raspberries, and granola.
  4. Repeat the layers once more, finishing with fruit on top.
  5. Drizzle the spearmint honey mixture over each parfait just before serving.
  6. Serve right away for the best mix of creamy, juicy, and crunchy textures.

Notes

For the cleanest layers, dry the berries well after washing and keep the granola separate until the last minute. The spearmint olive oil should taste bright and herbal, so add it gradually if you want a lighter drizzle. Best served soon after assembly for the nicest texture contrast.

Recipe Tips

Use thick Greek yogurt so the layers stay defined, and chill the fruit before assembling if you want the parfaits extra refreshing. If your honey is very thick, warm it just enough to stir smoothly with the Spearmint Infused Olive Oil.

Serving Suggestions

Serve these parfaits in clear glasses for a pretty brunch table, or build them in small jars for an easy grab-and-go breakfast. They also work well as a light dessert after a relaxed dinner.

Storage

Assembled parfaits are best enjoyed soon after building, but you can store the yogurt, fruit, granola, and drizzle separately in the refrigerator for up to 2 days. Add the granola just before serving so it stays crisp.

Variations

Swap in blackberries, peaches, mango, or raspberries depending on what looks best at the market. You can also fold a little vanilla into the yogurt or use chopped pistachios instead of granola for a different crunch.
