- 1. Pat the chicken dry and place it in a bowl or shallow dish.
- 2. Coat the chicken with the New Jersey Tomato Basil Infused Olive Oil Blend, extra virgin olive oil, salt, black pepper, garlic powder, and Italian seasoning.
- 3. Let the chicken sit for 10 minutes while you heat the grill or grill pan to medium-high.
- 4. Grill the chicken for 6 to 8 minutes per side, or until cooked through and nicely marked.
- 5. Transfer the chicken to a plate and let it rest for 3 to 5 minutes.
- 6. Slice the chicken, then arrange it on a serving platter with the tomato slices and mozzarella.
- 7. Tuck fresh basil leaves around the platter and drizzle everything with balsamic glaze and lemon juice.
- 8. Finish with an extra light drizzle of New Jersey Tomato Basil Infused Olive Oil Blend and serve right away.
Notes
The blend is used both in the seasoning and as a finishing drizzle, which helps the tomato-basil flavor carry through the whole dish. If your tomatoes are especially juicy, slice them just before serving so the platter stays neat.
