Ingredients

Ingredients
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons Habanero Pepper Infused Olive Oil
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon chopped fresh cilantro for garnish
  • Lime wedges for serving

Equipment

  • 1 Grill Preheated to medium-high
  • 1 Mixing bowl For the glaze and chicken
  • 1 whisk For blending the glaze
  • 1 Tongs For turning the chicken
  • 1 Instant-read thermometer To check doneness
  • 1 Platter For resting and serving

Method

Instructions
  1. 1. Pat the chicken thighs dry with paper towels and place them in a large bowl or dish.
  2. 2. In a small bowl, whisk together the Habanero Pepper Infused Olive Oil, extra-virgin olive oil, honey, lime juice, apple cider vinegar, garlic, salt, black pepper, smoked paprika, cumin, and red pepper flakes.
  3. 3. Pour about two-thirds of the glaze over the chicken and toss to coat well. Let it rest for 10 to 15 minutes while you preheat the grill.
  4. 4. Heat a grill or grill pan over medium-high heat and oil the grates lightly if needed.
  5. 5. Grill the chicken for 5 to 7 minutes per side, brushing with the reserved glaze during the last few minutes of cooking.
  6. 6. Continue grilling until the chicken is nicely charred on the outside and cooked through to an internal temperature of 165°F.
  7. 7. Transfer the chicken to a platter and let it rest for 5 minutes.
  8. 8. Finish with chopped cilantro and serve with lime wedges for squeezing over the top.

Notes

For the best flavor, let the chicken marinate briefly rather than long enough for the honey to dominate the surface. If using chicken breasts, pound them lightly for even thickness and reduce the grill time as needed. Keep a close eye on the glaze near the end so the sugars caramelize without burning.
