Habanero Honey Grilled Chicken with Habanero Infused Olive Oil
Ingredients
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons Habanero Pepper Infused Olive Oil
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon apple cider vinegar
- 2 cloves garlic minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon chopped fresh cilantro for garnish
- Lime wedges for serving
Method
- 1. Pat the chicken thighs dry with paper towels and place them in a large bowl or dish.
- 2. In a small bowl, whisk together the Habanero Pepper Infused Olive Oil, extra-virgin olive oil, honey, lime juice, apple cider vinegar, garlic, salt, black pepper, smoked paprika, cumin, and red pepper flakes.
- 3. Pour about two-thirds of the glaze over the chicken and toss to coat well. Let it rest for 10 to 15 minutes while you preheat the grill.
- 4. Heat a grill or grill pan over medium-high heat and oil the grates lightly if needed.
- 5. Grill the chicken for 5 to 7 minutes per side, brushing with the reserved glaze during the last few minutes of cooking.
- 6. Continue grilling until the chicken is nicely charred on the outside and cooked through to an internal temperature of 165°F.
- 7. Transfer the chicken to a platter and let it rest for 5 minutes.
- 8. Finish with chopped cilantro and serve with lime wedges for squeezing over the top.

Let us know how it was!Recipe Tips
Pat the chicken dry before seasoning so it picks up better color on the grill. Keep a little glaze back for serving, and brush it on during the last few minutes so the honey stays glossy instead of scorching too fast.
Serving Suggestions
Serve this chicken with grilled corn, cilantro rice, a crisp slaw, or warm tortillas. It also works well sliced over a summer salad or tucked into buns for an easy cookout plate.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a covered skillet or a low oven so the chicken stays tender.
Variations
Swap chicken thighs for boneless chicken breasts if you prefer a leaner cut, or add a little extra lime zest for a brighter finish. You can also use the same glaze on shrimp or pork chops for a different spin.
