  • 1 1/2 pounds ground beef
  • 1 small yellow onion grated
  • 3 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons Middle Eastern Infused Olive Oil Blend
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1 large egg
  • 1/4 cup plain breadcrumbs
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil for brushing
  • Wooden or metal skewers as needed

Equipment

  • 1 Large mixing bowl For combining the kofta mixture
  • 1 Box grater For grating the onion finely
  • 1 set Measuring spoons For the spices and olive oil
  • 8 Skewers Wooden or metal
  • 1 Grill or grill pan Preheated to medium-high
  • 1 Tongs For turning the kebabs
  • 1 Plate or platter For resting and serving

Method
 

Instructions
  1. If using wooden skewers, soak them in water for 20 minutes before cooking.
  2. In a large bowl, combine the ground beef, grated onion, garlic, parsley, mint, Middle Eastern Infused Olive Oil Blend, cumin, coriander, salt, black pepper, cinnamon, allspice, egg, breadcrumbs, and lemon juice.
  3. Mix gently with your hands until just combined; do not overwork the meat.
  4. Cover and chill the mixture for 15 minutes if it feels too soft to shape cleanly.
  5. Divide the mixture into 8 portions and shape each one into a long oval around a skewer, or form freeform logs if you are cooking without skewers.
  6. Preheat a grill or grill pan over medium-high heat and brush the grates or pan with olive oil.
  7. Cook the kebabs for 10 to 12 minutes, turning every few minutes, until well browned on the outside and cooked through.
  8. Transfer to a plate and rest for 5 minutes before serving.
  9. Serve warm with your favorite sides and sauces.

Notes

The meat mixture should feel cohesive but not pasty. If you do not have skewers, shape the kofta into short logs and grill or pan-sear them carefully. Keep the seasoning balanced so the featured blend stays clear in the finished flavor.
