Instructions
  1. 1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. 2. Scrub the potatoes and cut any larger ones in half so the pieces are similar in size.
  3. 3. Place the potatoes in a large bowl and toss with the Popcorn Infused Olive Oil Blend, extra virgin olive oil, kosher salt, black pepper, and minced garlic.
  4. 4. Spread the potatoes on the prepared sheet pan in a single layer, cut side down when possible.
  5. 5. Roast for 20 minutes, then flip the potatoes and continue roasting for 12 to 15 minutes more until the edges are crisp and the centers are tender.
  6. 6. Transfer the hot potatoes to a serving bowl and toss with the Parmesan cheese, parsley, and lemon zest.
  7. 7. Taste and adjust with a little more salt or pepper if needed, then serve right away.

Notes

For the best texture, keep the potatoes in a single layer and avoid overcrowding the pan. The savory-popcorn flavor from the blend plays especially well with the Parmesan finish, so add the cheese after roasting for the brightest flavor.
