- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- Lightly dust a work surface with flour, then roll the pizza dough into a 12-inch log and cut it into 1-inch pieces.
- Bring the water and baking soda to a simmer in a large pot.
- Drop the dough pieces into the simmering water in batches for 20 to 30 seconds, then remove them with a slotted spoon and place them on the prepared baking sheet.
- Whisk the egg with 1 tablespoon water, then brush the tops of the pretzel bites with the egg wash.
- Bake for 12 to 14 minutes, until deep golden brown.
- Toss the warm pretzel bites with Popcorn Infused Olive Oil Blend in a large bowl.
- Add the Parmesan, kosher salt, garlic powder, black pepper, and parsley, then toss again until evenly coated.
- Serve warm for the best texture and flavor.
Notes
For the best coating, season the pretzel bites while they are still warm from the oven. If you want a little more bite, add an extra pinch of black pepper. The baking soda bath gives the dough that classic pretzel surface and a deeper golden color.
